Aniseed owes its aroma to the ouzo. This plant contains chemical and organic tastes which are named tarpenes. Tarpenes are those that secure the characteristic aroma of aniseed, therefore the ouzo as well. These tarpenes are soivable in alcohol. This however, is not the same case with water.
Due to this contens of the ouzo in alcohol, these substances remain in dissolution. Although, when the ouzo is mixed with water the dissolution of tarpenes are impossible.
